Why would anyone make a zero-addition, zero-sulfur Napa Cabernet? I guess my best explanation is that I love Napa Cab. The most interesting thing to me about making this wine is that even though I pick about a month before most people would, the Napa Cab “terroir” still comes through—black currant, anise, tobacco. The difference is more in the texture and palate weight, and the subtlety of the flavors. The 2016 HD is light and vibrant, but super complex. Sit with this wine for a while and see if you can figure it out… and then let me know. There is some black fruit, lots of tannin… maybe some floral, almost lily and blood orange notes. In general, the wine is very Cabernet, with black fruit, tobacco, and spice notes, just much more fresh and lively than is typical for Napa Cab.
